Since my mom is now married to a potato farmer in Idaho – I was given 100 pounds of potatoes! HOLY HANNAH!!! I knew we wouldn’t eat all of them before they go bad so I had preserve them! So, I broke out the canner, started peeling, dicing, blanching and canning some giant potatoes! It was a lot of fun and I actually ran out of jars just over half way through the first bag!!!
Once I got all the peeling, dicing, blanching done I broke out a second canner. I had to or I would have been in the kitchen for another 3 hours, rather than just an hour!
Look at all those beautiful jars full of potatoes!!! Now to get some more jars so I can do the rest of those potatoes!!!
